The truffle. At $200 - $2000 dollars a pound they are the equivalent of culinary gold. Earlier today truffles came up in conversation and I thought hmmmmm, I wonder how much you can do with truffles? Typically when I think of the black and white root mushroom my mind immediately goes to French and Italian cuisine, but truffles can also be found in China, Crotaia, and the Pacific North West. So if you are looking to splurge this month, here are some truffle dishes to try:
